Inundated with cucumbers? There are tons of ways to fix zucchini, but cucumbers? Not so much.
For a refreshing change, try this easy chilled cucumber soup. It’s packed with summery flavors and is just 85 calories per serving!
5 cucumbers, peeled and seeded
1 cup fresh cilantro
8 ounces sour cream
¾ cup buttermilk
¼ teaspoon cayenne pepper
2 teaspoons kosher salt
1 12-ounce jar salsa verde
Roughly chop the cucumbers and scallions and place in a food processor. Add the cilantro, sour cream, buttermilk, cayenne and salt and puree until smooth. Chill and serve your cucumber soup with a side of salsa verde to spoon on top. Serves 8.
